As usual, the British weather has
been very unpredictable, and it's actually been too hot for tea. However, that
has never stopped me still drinking it in the past and it won't stop me now.
I'm a chai addict, I have a huge
sensitivity to caffeine, so me and coffee are on a no talking basis at the
moment. So when I'm at uni I usually rely on a chai latte to keep me alert
during 4-hour lectures, but I was never able to enjoy them at home. UNTIL NOW.

Ingredients:
Ginger (thumb size)
Cardamom pods (1/2 - 1 tbsp)
Nutmeg (1/4 tsp)
Black peppercorns (1/4 tsp)
Cinnamon (1 tsp)
Vanilla extract (1tsp)
Loose black tea (you can just open
a tea bag)
Milk (I use oat milk, it foams
well)
Sugar (or sweetener of your
choice)
Equipment:
Pan
Pestle and mortar/ tea towel and
rolling pin
Sieve
Milk frother/French press
(optional)
Method
1) To be frank I don't measure any
of the ingredients. Just eyeball the whole thing and adjust to your taste. One
thing I'll suggest is:
- you want only a little nutmeg
and pepper
- equalish part ginger and cinnamon.
- You don't need many pods because
they're very fragrant
2) Grind your spices with a pestle
and mortar. If you don't have one, put them in a tea towel you don't like a
crush them with a rolling pin (it'll be a little tricky though). You could use
already ground spices (I use ground nutmeg and cinnamon) but they may be a bit
less flavourful so add more if you need to.
3) Put your milk and vanilla in a
pan on a low simmer, it won't take long to heat up once you get little bubbles
it's done.
4) Add the spices and let them sit
for a minute then add your black tea and give it a stir till the tea is very
brown, then add your sugar (I don't normally have sugar with tea but it's
definitely needed here in my opinion)
5) Strain your tea in a fine
sieve, you can give it a couple passes if you need to. Then airate your tea by
either passing between two cups from a height (this also cools it down), with
an electric frother or in my case I just used my french press.
6) Now you're done! Have it with
